Midsummer Mint’s Dream (Choco/Mint Cupcake)

Summer makes me want to eat a lot of chocolate mint flavoured things. I find it sweet yet refreshing and I very much enjoy that on a hot summer day! Today I was craving chocolate so I decided to bake double chocolate cupcakes topped with a mint buttercream.

Cupcake Ingredients:

  • 1 1/4 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 salt
  • 3/4 cup dark unsweetened cocoa powder
  • 1/3 cup maple syrup
  • 1/2 Greek yogurt
  • 1/3 cup almond milk
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup semi-sweet chocolate chips
  1. In a large bowl combine together the flour, brown sugar, baking soda, baking powder and cocoa powder
  2. In a medium mix together maple syrup, Greek yogurt, almond milk, vanilla and eggs until creamy consistency
  3. Add wet ingredients to dry and mix together
  4. Add the chocolate chips and blend
  5. Fill 3/4 of the cupcake liner with batter
  6. Bake at 350°F for 18 minutes

Mint Buttercream Ingredients:

  • 1 cup unsalted butter
  • 2-3 cups icing sugar
  • 1-2 drops of peppermint oil
  • 1 tsp vanilla extract
  • food colouring optional
  1. In a medium bowl cream the butter on medium speed
  2. Add 1 cup of icing sugar and mix until incorporated
  3. Add 1 to 2 drops of peppermint oil depending on how strong you want your mint flavour
  4. Add food colouring (optional) and 1 cup of icing sugar
  5. Blend until incorporated
  6. If you’d like it sweeter, add more icing sugar (I added 2.5 cups and 2 drops of oil)

The mango fruit is my new favourite fruit. It’s deliciously refreshing and has a unique tropical flavour. Its scent is powerful and exotic and its flesh is packed with fiber and all kinds of vitamins! I could eat many in one sitting!

I recently tried the mango pineapple smoothie from Tim Hortons and thought that, as much as it was tasty, I could spend less by making something similar at home. It would also be a bit healthier since I’d be using fresh fruits and protein powder.

I used simple ingredients such as a fresh mango, juice, vanilla protein powder, ice and plain Greek Yogurt and the result was fantastic. I am very satisfied with this creamy mango smoothie and I hope you will too. I love how easy it is to make for breakfast and even for a quick boost at the end of a work day before my yoga.


  • Del Monte Tropical Pineapple Mango and Jackfruit Juice

    Del Monte Tropical Pineapple Mango and Jackfruit Juice

    1 Ripe Mango

  • 1/3 cup Del Monte Tropical Pineapple Mango and Jackfruit Juice
  • 1/2 scoop of vanilla protein powder
  • 3 ice cubes
  • 3/4 cups of plain Greek Yogurt. (I chose Liberté because it’s not as thick as other kinds of Greek Yogurt I have tried so far)


  1. Peel and pit 1 ripe mango and cut into pieces. Purée the mango with the juice until smooth. (I used a Magic Bullet)
  2. Add the protein powder and blend well.
  3. Blend the ice cubes until all the ice is crushed.
  4. Add the Greek Yogurt and blend.
  5. Serve over desired amount of ice cubes.

It’s so simple yet refreshing and delicious!
