Spice Sponge Cake


  • 2 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon cinnamon

Stir together flour, baking powder and spices

In a medium bowl, beat eggs with an electric mixer on high speed until eggs are thick.

Gradually add sugar, beating on medium until light and fluffy.

Add flour mixture and beat on low to medium until combined.

In a small saucepan, stir milk and butter until butter is melted; add to batter, beating until combined.

Pour into cupcake pan

Bake at 350 for 20-25 minutes or until wooden toothpick inserted near middle comes out clean.
